Yea, I have chocolate milk in both systems, have it partially taken apart and in service position. After talking to several people, a head gasket is the most likely culprit although I am also told that the 2.5 is one of the best engines vw has made and they would be very surprised to see a blown headgasket. Also the amount of oil and the fact that it is in both systems seems odd. I'm thinking (hoping) there is a chance it could be the oil cooler but I am finding almost no info on that. Any thoughts? I think I've figured out how to take that apart, if it is fouled, fixing it and running a compression test on the engine should tell me if it was the issue.
I would love any advice.

Do a compression test on the engine. If it is a head gasket, you should have a variance between one or more cylinders. If everything is good then look at the oil cooler.
