Well, like most repairs; you need to tear things down to the point, where you can get the bad parts out and then find replacements. Many of the most common hoses are being made by Gates and CRP/Rein; which are substantially cheaper than genuine vw but some hoses are only available from VW, so you need to research and see if they are available through the aftermarket. VW tends to put hoses inside protective sleeves and many times; the aftermarket will sell hoses but without all the webbed/protective sleeves, so it may look different than the original. The best thing to do is to get the original part number off the old hose or look it up on VW's website; then, try to cross reference the part number with the aftermarket companies online catalog.

Depending on where you can find them; order the hoses you need and start swapping out the parts.
The VW hoses are held on by hose constant tension clamps made by Mobea; these are tough to get off it in tight situations. I invested in a special cable hose clamp plier; it makes your life easier and in tight quarters, it can almost be impossible to get them off without them. Many companies and stores sell these now a days; I bought (at the time), the cheapest high quality version I could find and it was sold at Sears in the Craftsman line of tools. It is made by a different company now and the quality is not a good but you can get a idea of the type of pliers I am talking about. All of these type wear out and cables eventually break; so, make sure to get one from a company that offers a lifetime warranty.

Lastly, you will probably end up breaking plastic hose flanges and the elbows that come off the firewall. These are available through your vw dealer or they are sold under the Dorman brand of parts, from most auto parts stores. Don't be surprised, if you have to replace a number of plastic cooling system parts; as they get really brittle with heat and age.
