I had my 1998 NB into my local dealership for a new O2 senseor, and they want roughtly 200$ for it. I have found numerous NEW O2 sensors for less than 50 CDN.My question is how hard is it to replace the O2 sensor, and what would I need to do afterwards to get the CEL light to go off?

The replacement of the rear sensor is quite simple. Just unplug the connector, then unscrew the old sensor. Replace with the new one. The front sensor is the same, but tighter quarters (skinned knuckles).
You need to know which one to replace before throwing parts at the problem.
The CEL will turn off after just driving around for a few days.
