G'Day, my wife's '06 NB suffers from the sticky dash syndrome like most NBs, anyway 1 method which I know works is the following which I copied from one of the comments in a youtube video:
Please note that this video link suggests using Bug and Tar remover which also works.
Just use Soda Ash ( Sodium Carbonate ) aka washing soda (powder). Fill a 5L bucket with warm water, add 4-5 table spoons of powder and mix for a few seconds. Take a microfiber towel, dip it in water and rub your plastic panels. When you dip the towel in the clean water it will all turn black but don't worry...just keep going. No damage on the plastic. You don't even need to remove the panels. You'll finish the whole interior in 30 minutes. Works also on radio buttons or any kind of buttons. 1kg of washing soda is about $2 :)

I have tried this and it removes the coating very fast - leaves no residue - no smell as well.
